1 1/2 pounds boneless, skinless chicken thighs
1/2 teaspoon salt
1/2 teaspoon fresh ground pepper
2 tablespoons of olive oil
1 Tablespoon of Homemade Taco Seasoning
Preheat the oven to 375 ºF.
Heat an oven safe skillet over medium-high heat. Season the chicken with salt and pepper, then rub in with the olive oil. Add the chicken to the hot pan and brown on both sides—2 minutes each side. Cover the skillet and place in the preheated oven for 20 minutes.
Once chicken is finished, add to a bowl with the Taco Seasoning. If there are drippings in the pan, reserve for later. Mix with an electric mixer on low speed for a minute or two until the chicken is broken up and the spices are thoroughly mixed in. Toss the pan drippings in and use a spatula to coat the chicken.
Assemble your tacos how you like’em! Top with a hefty dollop of Sass Smoky Ranch.
