4 teaspoons brown sugar, divided
4 bone-in, skin on chicken thighs
8 ounces baby red potatoes, halved or quartered
8 ounces Rainbow carrots, cut into sticks
1 tablespoons olive oil
2 cloves garlic, minced
Kosher salt and freshly ground black pepper, to taste
Preheat oven to 400 degrees F. Lightly oil a baking sheet.
Massage the brown sugar into each of the chicken thighs.
Place chicken, potatoes, and carrots in a single layer onto the prepared baking sheet. Drizzle with olive oil and sprinkle with garlic. Season with salt and pepper, to taste.
Place into oven and roast until the chicken is completely cooked through, reaching an internal temperature of 165 degrees F, about 25-35 minutes. Serve immediately, and drizzle with SASS Ranch. Stay SASSY!
